Sadly, these are very hard to find in London nowadays – so when Colin Calder, a successful energy entrepreneur, suggested Ormer in The Flemings Hotel, I was very pleasantly surprised.
As it turns out, this is a Jersey restaurant, and Jersey chef, coming on board to bring us Jersey seafood in a fresh, lovely style.
The restaurant in Jersey has one star, and is clearly a winner.
For our first course, I chose tuna sashimi, which came in little rolls of raw turn of the highest quality, with a scallop ceviche and Bloody Mary jelly on the side, and which was light and delicious.
My friend had the lobster ravioli, which was a large pasta shell filled with fresh Jersey lobster, in a crab and tomato bisque, with a shallot and coriander salad – an interesting pairing which did not detract from the delicate flavours of the seafood.
For the main course, we had salt-baked sea bass, which was wonderfully prepared with Parma ham, tomato salsa and black olive caramel – just the thought of caramel on fish was enough to make me want to try it – and it was certainly worth it.
Rarely have I found sea bass to be prepared so unusually, and I would go back just for this.
Next, we decided to go off the fish route and tried the Secreto of Iberico pork, served with calamari, chorizo and apple chutney, and a pressed Asian pear – I love pork and this was an amazing preparation – a thin piece, sliced in slivers of perfectly-done pork oozing with the flavours of the ingredients from which it was made.
I loved it, and would order it again – when I will surely return to try also the Dover sole with a smoked salmon, potato and leek risotto, and Jersey lobster grilled with avocado and garlic butter, which looked wonderful at the table next to us.
To follow this came dessert, which, although we were really content with our delicious earlier courses, we could not resist trying the baked Alaska with blackberry, thyme and mint, and a dark chocolate brownie with salted caramel flavour popcorn and milk ice cream.
These desserts were what they should be – heavenly.
